Baigan is the Indo-Trinidadian name for the eggplant, also commonly known as melongene. It is usually elongated but this particular type is also called Aubergine. I was inspired by its beautiful round, purple shape contrasting against my favourite yellow bowl and nestled amidst the red round tomatoes. I imagined the aroma of pepper, garlic and geera seasonings teasing my nostrils as a pot of baigan and tomato choka sizzled in my mother’s kitchen, some hot sada roti on the side.
